Kimchi Fried Rice – Date Night Dinner Inspiration

Cooking Time: 15 Mins

Skill Level (Low, Med, High): Low

Equipment:

  • Large saute pan
  • Small frying pan
  • Knife
  • Chopping board
  • Peeler

Ingredients:

  • Microwaveable wholegrain rice
  • Kimchi
  • Eggs
  • Carrots
  • Spring onions
  • Coriander
  • Sriracha
  • Toasted sesame oil
  • Garlic
  • Ginger
  • Lime
  • Tenderstem broccoli

Method:

  1. Start by prepping your veg, chopping the broccoli, peeling ribbons from the carrots, finely chopping the peeled ginger and garlic, chopping the spring onions, halving the lime and removing the stems from the coriander
  2. Add some toasted sesame oil to the pan and begin to saute the broccoli and once slightly tender, add the carrots and spring onions (saving some for garnish)
  3. Then add the ginger, garlic and kimchi. Season with salt and pepper
  4. Squeeze in some lime and move the contents of the pan to one side, add in your pack of rice
  5. In a separate pan, fry an egg in some toasted sesame oil
  6. Plate up, garnishing with your egg, coriander and spring onions
